2 Grimaldi Farms Farm Fresh Eggs
1 slice White/Wheat Bread
4 Grape Tomatoes
1 Boiling Onion
6 tbsp Olive Oil
1/3 cup Parsley, finely chopped
1/3 cup Chives, finely chopped
Salt, to taste
Pepper, to taste
Tomato and Onion Salsa
Chop grape tomatoes and boiling onion placing in a small bowl, and stir. Pour 3 tbsp Olive Oil, then added parsley and chives
Stir well. Set aside
In a medium sized pan add remaining 3 tbsp Olive Oil and heat on medium.
Crack 2 eggs into pan and heat with Yolk side up until eggs are fully cooked. While eggs are cooking you can toast your bread.
Place toast on place then top with eggs.
Spoon small amount of Tomato and Onion Salsa next to Egg yolk.
