Marinated Short Ribs

 

Ingredients List

3 - 4 pounds  Grimaldi Farms Beef Short Ribs 

2 - 12 fl. oz   Favorite choice of beer 

4 - 5 cloves   Fresh Garlic - crushed 

1/4 cup       Fresh Basil,  coarsely cut 

1/4 cup       Fresh Rosemary, coarsely cut 

1/4 cup       Fresh Chives, coarsely cut 

Salt, to taste

Pepper, to taste

Marinate short ribs for 2 days in your favorite beer and spices.

Beer Mixture (marinate for 2 days)

In the Photo above we did 2 bottles of Magic Hat #9. Added garlic and fresh spices, we use some of our own fresh out of the garden; basil, parsley,rosemary and chives, add salt, pepper and crushed red pepper to taste. 

      

Cooking Instructions

Slow cooked in oven at 250 degree for 5 hours, on an ungreased baking pan, fat-side up. 

Remove from oven let rest for 5 minutes.

Certified Organic Beef Jerky

Ingredients List

4 - 6 pounds     Grimaldi Farms Minute Steak(s)

12 - 16 oz        Favorite marinade 

8 oz                Local Honey

1/4 cup          Ginger, crushed 

2 cloves           Garlic, minced

We have done our own beef jerky many ways.

 

You can use your own favorite marinade and let the Minute Steaks sit refrigerator in the marinade for 2-3  days. 

 

We did a teriyaki marinade added our local honey ,garlic and crushed ginger.

 

Put in a dehydrator for 7-8 hours.

Mushroom Stuffed Certified Organic Burgers

Ingredients List

2 pounds      Grimaldi Farms Ground Beef 

16 oz          Mushrooms, Whole, Sliced

2                Sweet Onion, Sliced

1/4 cup      Red Wine

1/4 cup      Balsamic Vinegar

1 slice         Thick-Cut Bacon / burger patty

1 slice         Favorite type of cheese 

Salt, to taste

Pepper, to taste

Saute mushrooms and onions in red wine and balsamic vinegar cook until caramelized.  (Set aside)

How to make the burger patties 

Take 1/2 pound of Ground Burger and from into a patty.  Using an aluminum can place it in the center of patty and press in to form a hole in center of patty. Make sure you press the outside of the burger so that it keeps it's shape.

Wrap bacon around the outside of the patty. The thicker sliced bacon works the best.

Stuff beef patties with the sauted mushrooms and onions (See above photo) 

Cook on grill slowly at low temperature to your preference, we did ours on the medium rare side took 25 minutes

Top with your favorite cheese 2 - 3 minutes prior to removing from grill.

You can put them on a bun or just eat without a bun.

Either way they are delicious!

Certified Organic Ribeye Steak for dinne

Certified Organic Steaks

Ingredients List

1 - 16 - 18 oz   Grimaldi Farms Steak(s)

12 - 16 oz        Favorite marinade 

For Marinades 

2 -3                 Limes

1/2 cup           Pineapple Juice

1/4 cup           Cilantro, chopped

3 oz                Ginger Root, Shredded

2 - 3 cloves       Garlic, minced

1/2 cup           Olive Oil 

Salt, to taste

Pepper, to taste

Our Steaks are great plain or we have done dry rubs, marinades, or simply just salt and pepper. 

 

If you marinade the steaks, allow 2 days of marinading time to get the most out of the flavor.  (flipping the steaks every 6 hours)

Cooking Instructions

Grill steaks to desired preference. 

 

Lime cilantro marinade

Using the limes, squeeze juice into large container, add cilantro, garlic, olive oil, salt and pepper to taste.  Stir well. 

Teriyaki marinade

Combine Teriyaki sauce,  garlic, pineapple juice, ginger and pepper.  Mix all ingredients well.
